Summer Garden Vegetable Soup

Tonight for dinner we made a yummy new recipe my friend Kate shared. It was to die for. I highly recommend it. Jared even loves it and he hates tomatoes and zucchinni. I can't wait to make this again!


Summer Garden Vegetable Soup


3 medium zucchini, chopped into bite size pieces

4 medium tomatoes, chopped into bite size pieces

2 tablespoons minced fresh parsley

1 teaspoon dried basil (or 1 tbsp fresh basil chopped)

2 tablespoons butter

1 medium onion, chopped

1/4 cup flour

1 tsp salt

1/4 tsp pepper

3 cups chicken broth

1 teaspoon lemon juice

1 (12oz) can evaporated milk

1 1/2 cups frozen or fresh corn kernels

1/4 cup freshly grated parmesan cheese.





In large pot, melt the butter over medium heat. Add the zucchini, basil, parsley and onion and saute, stirring occasionally, for 2 to 3 minutes. Add the flour, salt and pepper and stir and cook for one minute. Gradually add the chicken broth, whisking or stiring constantely. Add the lemon juice; mix well. Bring the soup to a simmer, stirring to prevent sticking, and cook for 2 to 3 minutes, until the zucchini is tender but still has some bite to it (it will continue coooking for a few more minutes). Add thetomatoes, evaporated milk, and corn. Bring the soup to a boil and reduce the heat to medium-low. Cover the soup and simmer until the corn and zucchini are tender. Stir in the cheese just before serving.



Serve with corn bread

Heaven Help Me

Have you ever had a moment when you say "What the hell was I thinking?" Well needless to say I am living that nightmare right now. I am so sick over it and don't know what to do other than cry. I serisouly am beyond embarrased, upset, sad, and just stunned. I am too afraid to go out in public thats how awful I feel. I am dreading having to take Hailey to school in the morning and seeing someone I know. I don't know what the heck I will do. Don't laugh to hard I have no idea why I am posting pictures. Maybe so I can look back and remember the horrow and humiliation I am going through.

SO for a few weeks now I have been needing a hair cut. I wanted to cut my hair shorter and do some kind of different do. However I didn't know what to do. I have been looking at hairstyles and finally picked a few I liked. Needless to say of course it didn't turn out and it seems so short. I have no idea what to do. All i can do it cry. Needless to say here are the pictures. Enjoy a laugh at my expense.

First Day of Kindergarten

Remember this darling little girl who was just starting preschool ...

Look at her now...Today she started Kindergarten. look how much she has changed and grown in the last two years. I even made it through taking her to school with out crying. She was a little nervous at first...
But she got right in line where she was supposed to be...
She found her friend Abby and a few others from the ward
the teacher told the kids to wave Bye to their Moms....
and off they went...SHe came out with a big smile and even posed with Mrs. Long
And my favorite was this paper that said "My first day of kindergarten was a piece of cake" and it had a zingers cake attached to it. Hailey had a great first day and can't wait to go back!
I am glad she loved school. She even said can't I stay all day!?! I am sad to see her grow up but excited to start a new phase of our lives!

JDRF Walk

Today we walked for JDRF Juvenile Diabetes Research Foundation in honor of our favorite niece Brittany. She was diagnosed four years ago and is such a brave girl. I don't think at her age I could have dealt with the trails she faces daily due to diabetes. I hope that someday they will find a cure for Brittany. Hailey was so excited for the walk. She kept telling her friends and neighbors, "Brittany has diabetes and we are walking for her!" After the walk when we got home she made sure to tell her friends, "The walk was AWESOME!" It was a lot of fun to walk and support Brittany. Along the walking route they had pictures of the kids who have diabetes and it was fun to spot Brittany's. After the walk we enjoyed a free lunch and some fun activities. Theres nothing like eating a hot dog at 10:30 am! Thanks to Brittany and her family for letting us join there team. We can't wait till next year! Thank you also to those who donated to support us in our walk. We were overwhelmed with your generosity!

And i Have to say I think she is adorable. She was so excited and happy for her new haircut! SHe looks too grown up now though. oh and yes I did shed a tear or two that we chopped it all but its so cute!~

PTA

I am super excited to get to be involved with the PTA at Hailey's School. I was hoping I'd be able to do something to occupy some of my time while Hailey is in school. Needless to say they asked if I'd be willing to do their bulletin board. I was scared to death to be honest. I have never done a board and didn't know what to do. However after a little thought and work I think it turned out great. I am already planning what I will do to it in a few months. I think I will change it around the seasons or something. I do have to admit it was fun to do! Here is a quick picture!

The Fairy Princess

Haliey has been having a great time using her wings and wand from the birthday party. SHe was even lucky enough to get a sword to. So now at night when we sit out she plays Fairy Princess and has the neighbor boys be the pirates and chase her. And she cast spells on them. It's so cute! I love her imagaination and I love that darling fairy!

Birthday Party Season!

August is a busy month of birthdays in our family. Hailey was super lucky and got to go to three of her cousins parties in the past week. She loves birthday parties and her cousins so she was in heaven. Here are a few pics!

First Tooth Lost

I can't believe Hailey is already old enough to be losing teeth. She has had a loose tooth for a few weeks now. And tonight i noticed it was just hanging. We tried to get her to let us pull it but she was too afraid. Needless to say Grandma Lems went for a run by our house and "wiggled" aka pulled it out. She didn't even realized it and it was out. She is a little nervous about teh Tooth Fairy but hopefully she gets a dollar!
